オリーブオイルの原料となるオリーブの木を庭先で育てている人は多く、なかなか実った分全ては食べきれないことも多々あります。
そんな時は自家製のオリーブオイルを作ってみてはどうでしょうか？

オリーブオイルの作り方はなんとなく難しそうで、ごま油とかサラダ油の作り方を考えると「自家製では無理かな」と考えていたのですが、自家製のオリーブオイルは案外簡単に作ることができるんです。

今日はそんな「自家製のオリーブオイル」の作り方についてです。
オリーブオイルの原料となるオリーブの木を育てている人は是非参考にしてみてください。

自家製オリーブオイルを作るのに用意する物

自家製オリーブオイルを作るのに必要な物は以下の通りです。

・新鮮な有機オリーブの実、2kg強
・湯、約120mL～250mL（蒸留またはろ過した水を使用）
・肉たたきやすりこぎ（マレット）
・スティックミキサー
・厚手のジッパーつきの袋
・布や台所用のネット
・コーヒードリッパー
・コーヒーフィルター
・大きめの瓶

これらの物を用意して、以下の手順に従ってオリーブオイルを作ります。

自家製のオリーブオイルの作り方についてです。

1.オリーブの実をよく洗い、傷んだ実や木の枝、ゴミを取り除く。

2.オリーブの実を厚手のジッパーつきの袋に入れて、肉たたきやすりこぎで約1時間ほど押し潰す。このとき、オリーブの種は取り除いたほうがよい。

3.潰したオリーブの実に湯を少量加えて、スティックミキサーでさらにすり潰す。約5分間作業を続けると、オイルが表面に浮き上がってくる。

4.布や台所用のネットをコーヒードリッパーにかけて、潰したオリーブの実を入れて絞る。下に置いた瓶にオイルと水分が混じった液体が落ちてくる。

5.その液体を1日そのまま置いておくと、オイルと水分が分離する。上澄みのオイルをコーヒーフィルターで濾して、別の瓶に移す。これで自家製オリーブオイルが完成する。

保存はどうすればいいの？

オリーブオイルの保存には、空気、光、高温を避けることがポイントです。
容器のフタはしっかりと締めて、冷暗所に置いておくとよいでしょう。
冷蔵庫に入れると固まってしまう場合があるので、注意してください。

 

失敗しない３つのコツ

自家製オリーブオイルを作るときに失敗しにくくなるコツを3つまとめました。

 

1つ目のコツ

新鮮で熟したオリーブの実を選ぶことです。
オリーブの実は収穫したてのものをできるだけ早く潰してオイルにすると、風味や品質が高くなります。
また、色が紫～黒色の熟したオリーブの実は、青色の未熟なものよりも油分が多く抽出しやすいです。

 

2つ目のコツ

潰したオリーブに湯を少量加えてスティックミキサーでさらにすり潰すことです。
この工程は「マラキシング」と呼ばれ、小さいオイルの粒が結合して大きい粒になり、より多くのオイルが抽出できます 。
湯は沸騰させない程度に熱くし、潰したオリーブ250mL分に対して大さじ2～3杯（30～45mL）程度注ぎます。

 

3つ目のコツ

オイルと水分が分離するまで潰したオリーブを混ぜることです。
スプーンでペーストを強くかき混ぜると、固形のオリーブの搾りかすからより多くのオイルが抽出されやすくなります 。
この作業も「マラキシング」工程の一部とされていますが、素早いスピードでオイルを分離させる代わりに、混ぜる際の回転力を利用して様々な成分を分離しています。

500gのオリーブの実からどのくらいオリーブオイルが取れるの？

500gのオリーブの実からどのくらいのオリーブオイルが取れるかは、オリーブの品種や収穫時期、潰し方や搾り方などによって異なりますが、
一般的には約50～100mLほどと言われています。
オリーブの実は約20～30%の水分と約15～25%の油分を含んでいますが、そのうちの約半分程度しかオイルとして抽出できません。
オリーブオイルを作るには、新鮮で熟したオリーブの実を選び、収穫したてのものをできるだけ早く潰して搾ることが大切です。

どのくらいの高さまで育てればオリーブの実が取れるの？

オリーブの木は、成長が早く、剪定しないで放任すると5〜15mにもなることがあります。

剪定の適期は3月で、枝を伸ばしたい方向と反対方向に伸びている枝や、上部から立ち上がっている強い枝を切ります。
また、受粉樹として別品種のオリーブも植えることで、果実の結実がよくなります。

一本の木からどのくらいオリーブの実が取れるのか

オリーブの木から取れる実の量は、品種や栽培条件によって異なりますが、一般的には以下のようになります。

10年樹齢のオリーブ1本から収穫できる量は、日本では約10kg、南イタリアでは約200kg、チュニジアでは約600kgです。
実の重さは品種によってまちまちですが、ひと粒約1.5～4gです。
最終的に1Lのオリーブオイルを得るには、およそ5kgのオリーブの実を必要とします。

・オリーブの木は、自家不結実性のため、異品種のオリーブも植えることで、果実の結実がよくなります2。オリーブにはさまざまな品種がありますが、シンボルツリーにおすすめなのは、「レッチーノ」、「ミッション」、「ネバディロ・ブランコ」、「ルッカ」などです。
・オリーブの木は、病気や害虫に比較的強い植物ですが、注意するべきものとしては、オリーブフライやオリーブモスなどの害虫や、黒星病や炭疽病などの病気があります 。害虫や病気に感染した場合は、適切な薬剤を使用して対処してください。

オリーブオイルが体に良いと言われている理由は、主に以下の3つです。

・オリーブオイルは一価不飽和脂肪酸が豊富です。一価不飽和脂肪酸は、悪玉コレステロールを減らし、血管の健康を保つ効果があります。また、炎症を抑える作用もあります。
・オリーブオイルには抗酸化物質が含まれています。抗酸化物質は、細胞の老化や損傷を防ぐ効果があります。特にエクストラバージンオリーブオイルには、ポリフェノールという強力な抗酸化物質が多く含まれています。
・オリーブオイルは胃や腸に優しいです。オリーブオイルは胃での滞在時間が短く、胃酸の分泌を抑える効果があります 。また、便を柔らかくして便秘を改善する効果もあります。

ごま油と比較した時にどっちの方が体に良いの？

一概にどちらが良いとは言えませんが、以下に主な違いをまとめてみました。

：ごま油はリノール酸が多く含まれています。リノール酸は必須脂肪酸で、血圧やコレステロールを下げる効果があります。しかし、摂りすぎると善玉コレステロールまで下げたり、酸化しやすくなったりするので注意が必要です。

：オリーブオイルはオレイン酸が多く含まれています。オレイン酸は悪玉コレステロールだけを下げて善玉コレステロールを保つ効果があります。また、酸化しにくく、胃や腸にも優しいです 。

：ごま油とオリーブオイルのカロリーはどちらも同じです。1gあたり9kcalで、大さじ1杯 (12g)で110kcalです 。油は高カロリーなので、適量を守ることが大切です。

：ごま油とオリーブオイルの使い方は異なります。ごま油は中華料理やドレッシングなどに使うのがおすすめです 。オリーブオイルはパスタやサラダなどに使うのがおすすめです 。加熱調理にはオリーブオイルの方が向いています 。
